Pav bhaji

This is one the most popular street food liked by one and all. A complete food in itself and quite nutritious as well. 

Preparation time: 45 mins
Cooking time   : 45 mins
Serves : 4-6 people



Ingredients Required :
 I have divided into 2 parts, in 1st part its the vegetables required which should chopped or if possible it can even be grated.

  • 2 medium sized potato boiled, peeled and throughly mashed
  • 2 medium sized capsicum finely chopped ( approx 1 cup)
  • 1 cup of finely chopped cauliflower
  • 1 cup fresh peas boiled and lightly mashed
  • 1 cup of grated carrot
  • 1 cup of baby corn which has been boiled in water for 5-10 mins and then finely chopped
  • half cup of grated cheese or paneer ( optional)
  • finely chopped coriander leaves
Now for the Gravy:

  • 2-3 tspn of freshly ground ginger-garlic paste
  • 2 medium sized onions made into a paste
  • 2 -3 medium sized tomatoes made into a paste
  •  half cup of refined oil
  • 1-2 tspn of cumin seeds ( jeera)
  • 1-2 tspn of tumeric powder ( haldi)
  • 2-3 tspn of pav bhaji masala
  • 1-2 tspn of chilly powder
  • salt to taste
  • butter as per choice or taste 
  • 200 ml of water
Procedure to make :

There are even  two parts when it comes to cooking-
One is cooking the vegetables and as the vegetables are getting cooked making the gravy.


  • Begin with heating a large heavy bottomed pan and adding 2-3 tspn of oil in it and once its heated add the vegetables to it. Firstly adding grated carrot,cauliflower , capsicum and once these are have done add boiled and mashed peas and potatoes. 
  • Using a spoon mix all the veggies throughly and mash them together.
  • Now in separate pan heat oil and add cumin seeds, tumeric powder and let the cumin seeds splutter before adding freshly ground ginger-garlic paste.
  • Saute properly till it starts leaving oil from sides of pan, now add onion paste and saute again till oil starts leaving sides again.
  • Add tomato paste and fry properly. Remember the tomatoes and onions must be properly saute or they will taste raw and taste will not come out properly.
  • Now dissolve pav bhaji masala,chilly powder and salt in a cup of water. Add this to the above gravy and bring to boil.
  • Add the cooked vegetables and mix throughly and add water if its too thick. 
  • Add butter to this if required
  • Check salt and Garnish coriander leaves.
Serve hot with buttered pav with a dash of lemon juice and sev

Serving tip:-
In a tava add the above prepared bhaji and saute it throughly using a karchi and also simultaneously mashed it more and adding little more water and frying. Then in the same pan roast the pav. This will give the taste u get in hotels or those roadside stalls.
