Palak ki puri aur kadhu ki sabzi

Ingredients required:-

For the palak puri :-

  • 1 cup of palak puree
  • 2 cups of wheat flour
  • water as required
  • 1 tspn of chilli powder
  • 1 tspn of ginger paste
  • 1 tspn of salt
  • 1 tspn of kasoori meethi
  • Refined oil to fry the puris

For the kadhu sabzi ( pumpkin curry)

  • 2 cups of pumpkin peeled and cut into cubes
  • 6-7 baby potatoes peeled
  • 1/2 cups of cashew nuts
  • 1-2 tspn of ginger-garlic paste
  • 1 cup of onion paste
  • 1 cup of tomato puree
  • 2-3 tspn of refined oil
  • 2-3 red chillies broken
  • 1 tspn each of cumin seeds (jeera), mustard seeds ( rai), asafoetida(hing)
  • 1 tspn of turmeric powder ( haldi)
  • 1-2 tspn each of chilli powder, coriander powder, cumin powder,garam masala powder
  • 2 tspn of grated jaggery
  • water as required
  • Salt to taste

procedure to make the palak puris:-

  • Firstly combined all the ingredients together listed in making puris and just add 2 tspn of oil and water as required n knead a into a dough.
  • Make sure that the dough is not so soft.
  • Divide into balls and make into small puris.
  • Heat oil and fry the puris

procedure to make kadhu ki sabzi:-

  • In a pressure cooker heat some oil and to this add the cumin seeds, mustard seeds, turmeric powder, asafoetida (hing) and red chillies and the cashew nuts.
  • After the mustard and cumin seeds splutter add the ginger-garlic paste and fry till oil leaves the sides.
  • Add the onion paste n fry till it turns light brown.
  • At this point add tomato paste and fry till oil starts leaving the sides of cooker.
  • Now in a bowl of water mix all the dry masalas together and add it to the cooker.
  • Fry properly and add the diced pumpkin and the baby potatoes.
  • Now add the jaggery and salt.
  • Put the lid on and pressure cook for 2 whistles on a medium high flame.
  • Serve hot with palak puris.
