 Veg jalfrezi is made with a variety of veggies but today i used just baby corns , cauliflower and capsicum. You can also use Green peas, Potatoes,Paneer and Carrots.

Ingredients Required :-

  • 2 cups of baby corns cut into 1 inch long pieces
  • 2 cups of diced and cubed capsicum
  • 1 cup of  cauliflower cut into florets
  • 1 medium sized onion cut in long slices
  • 1 medium sized tomato deseeded and cut into cubes
  • 2 tspn of ginger -garlic paste
  • 4-5 tspn of tomato sauce
  • 4-5 tspn of freshly ground coriander powder
  • 1-2 tspn of red chilly powder
  • 1 tspn of turmeric powder
  • 1 tspn of garam masala powder
  • 2-3 tspn of refined oil
  • salt to taste 
  • coriander to garnish

Procedure to make :-

  • Firstly boil all the veggies expect onion and tomatoes in water with a pinch of turmeric powder and salt for ten mins and then immediately drain the water and put the veggies in iced water for ten mins. This is called blanching or refreshing.
  • After this heat oil in a kadai and add ginger-garlic paste fry till raw smell goes away.
  • Then add onions and fry till translucent.
  • Now add the vegetables and cook under medium high flame till almost done. Add a little water if necessary.
  • Add the freshly grounded coriander powder and mix throughly with the vegetables.
  • Let it simmer for a while before adding red chilly powder,garam masala and tomato sauce.
  • Mix throughly, and add salt as per taste.
  • Cook on simmer for 5-10 mins and serve hot with rotis,kulcas or naan
