Crepes

The word "crepe" is of french origin,deriving from Latin word crispa which means Curled. Often served with variety of fillings like veggies, or fresh fruits topped with cream or even scrambled egg. This is healthy meal for kids as you can fill the crepes with veggies or fruits and get your kid get the necessary nutrition. Easy to make and you can use your imaginations and be as creative as possible with the fillings.

    I made crepes with two fillings:- 
  •  Chinese noodles which has capsicum,baby corn and carrots
  • Spinach,Potatoes and cheese fillings.
This can be served as a complete meal along with a glass of milk.
This can be very healthy and yummy menu for the parties where in you can make a variety of fillings and let the guests assemble the filling of their choice.

Preparation time:- 10 mins
Cooking time:- 40 mins
Ready in 50-60 mins
Makes 8-10 medium sized Crepes

INGREDIENTS REQUIRED FOR MAKING THE CREPES:-
  • 1 and 1/2 cups of All purpose flour
  • 2 eggs
  • 1 cup of milk
  • 1 cup of water
  • 1 tspn of baking soda
  • 1 tspn of salt
  • 1 tspn of (softened) butter
Procedure to make:-
  • Shift all the dry ingredients using a sieve.
  • Now in a mixing bowl put all the ingredients together and whisk using a blender.
  • In case you don a hand blender you can use a regular blender also.
  • Blend together to form a smooth batter.



Heat a pan on a medium flame and rub a little butter on it. With the help of a ladle pour the crepe batter in center of the pan and rotate the pan to evenly spread it. Once its cooked on one side flip it to the other side to make sure its evenly cooked.

 Now to make the fillings:-

Ingredients Required to make Chinese fillings:-

  • 1 medium sized capsicum longitudinally  cut
  • 4-5 baby corn cut longitudinally cut
  • 1 medium sized carrot longitudinally cut
  • 4-5 cloves of garlic finely minced
  • 1-2 green chillies finely chopped
  • 3-4 tspn of refined oil
  • 2 tspn of plum sauce or chutney(optional)
  • 3-4 tspn of tomato sauce
  • 50 grams of noodles
  • 1-2 tspn of white pepper powder
  • Salt to taste


Procedure to make the Chinese filling;-
  • In a sauce pan heat some water along with a little salt and add noodles and cook till its half done or the al dente stage.
  • Drain the water and keep aside the noodles
  • In a sauce pan heat some oil and saute garlic and green chillies.
  • After garlic turns brown add the remaining veggies and saute till its cooked. 
  • Make sure not to over cook the veggies or it becomes soggy and spoils the taste.
  • Toss the noodles into the veggies and mix well.
  • Season with the sauces,salt and pepper powder and keep aside.



Ingredients required to make the Spinach-potato-cheese fillings:-

  • 1 bunch of Spinach leaves finely chopped( Soak it in salt-turmeric water to remove dust and other impurities)
  • 1 medium sized potato boiled
  • 1 cube of processed cheese (optional)
  • 1 small onion finely chopped
  • 4-5 cloves of garlic finely minced
  • 1 tspn of chaat masala
  • 1 tspn of pepper powder
  • 4-5 tspn of refined oil
  • Salt to taste
Procedure to make the filling:-
  • In a sauce heat some oil and saute garlic and onions till its golden brown.
  • Now drain spinach leaves and add it to the saucepan.
  • After the spinach are cooked add the boiled and mashed potatoes.
  • Add some grated cheese and season with chaat masala,pepper powder and salt.
  • Keep aside.

Now to assemble the crepes.

  • Place the filling in center of the crepe and place a piece of cheese cube(optional) on top of it.

Fold and serve hot.You can serve it with ketchup of your choice.
