These days with the  introduction of so many new cuisines from across the world people have forgotten the traditional dishes. Dal pakwan is one such dish which is enjoyed by kids and elders as well. Its a dish from sindhi cuisine and is classic sindhi breakfast dish. Easy to make and has minimum ingredients with minimum spices making it a ideal dish for kids. The crispy pakwan served it dal is a foodie's delight. 

The recipe has two parts-1) Making the dal
2) And making the puris which are called the pakwan.

Firstly the Ingredients and the procedure for the Dal:-

  • 250 grams of Chickpea brown ( Chana dal)
  • 2 tspn of turmeric powder
  • 4-5 curry leaves
  • 3-4 tspn of refined oil
  • 2 tspn of cumin seeds ( jeera)
  • 1 tspn of mustard seeds ( Rai)
  • 2 tspn of turmeric powder (haldi)
  • Salt to taste
  • 2 -3 green chillies slit in half
  • 2 tspn of chat masala
  • 2 tspn of chilly powder
  • 1-2 medium sized onions finely chopped
Now the procedure to make the Dal:-
  • Wash and soak the Chickpea (chana dal) for 1 hour before pressure cooking for 1 whistle.
  • Remember the dal must not become mushy. It most have some bite and crunchy texture.
  • Now in a saucepan heat some oil and to this add Cumin seeds,Mustard seeds, Turmeric seeds, Curry seeds and slit green chillies.
  • After the mustard seeds splutters add the pressure cooked dal and saute well.
  • Add salt to taste.
Your dal is ready.

Now the ingredients to make the Pakwan:-
  • 1 cup of all purpose flour ( maida)
  • 1 tspn of salt
  • 2 tspn of warm oil
  • 1 tspn of ajwain
  • 2 tspn of turmeric (ideally turmeric is not added to pakwan but i added to give it a nice yellow color and make it attractive for kids)
  • Water as required for kneading the dough.
  • Oil for frying.
Procedure to make the pakwan :-

  • In a kneading bowl add all purpose flour ,salt,ajwain and add the warm oil and rub it properly into the flour.
  • Now add the turmeric powder and add water as required and knead into a dough which is neither hard nor a soft dough.
  • Cover and keep for 15 minutes.
  • Divide into small lemon sized ball and roll out as puris.
  • Now take a fork and prick the puris. This is to make sure the puris don puff up and turn crisp.
  • Put in heated oil and fry till done.
Now to assemble the dish :-

  • Serve dal in a bowl add finely chopped onions on top and sprinkle chilly powder,chaat masala or amchoor powder. Serve it hot with the Pakwan. 
  •  When serving for kids don sprinkle chilly powder and remove the slit green chillies.
