Papadi chaat

Another popular Indian street food,something which many people like.Its called by different names in different parts of India. In belgaum the place where i stay its called as Ragada puri and its called Masala Puri as well.Its excellent choice of menu in rainy seasons or winters to be served in Kitty parties of Aunties and Kids Birthday Parties as all the stuff can be made and kept before hand and assemble everything before serving. The ingredients and spices can be adjusted as per personal choice.

Preparation time:

  • 1-2 hrs includes time for chopping onions,boiling potatoes and matar.
  • Soaking time for the white matar to make the Ragada:-Overnight or 7-8 hrs.

Cooking time: 30 mins.

Serves 5-6 people

Ingredients Required:-
  • 1 cup of white matar soaked overnight. 
  • 3 medium sized potatoes
  • 1-2 medium sized onions finely chopped
  • 1 tomato finely chopped
  • 1 packet of pani puri ( just the puris) or the flat papdis
  • 2 tspn of ginger paste
  • 2-3 green chillies finely chopped
  • 2 tspn of refined oil
  • 1-2 tspn of turmeric powder
  • 2 tspn of Cumin powder(jeera powder)
  • 1 tspn of coriander powder( dhania powder)
For Garnish:-
  • Tamarind Chutney 
  • Chaat masala
  • Chilly powder( if required)
  • Thick whisked curd(optional)
  • Green coriander chutneys
  • Fine sev
Procedure to make the ragda:-
  • Wash the soaked matar and pressure cook along 3 peeled potatoes along with a tspn of turmeric,ginger paste,finely chopped green chillies,cumin powder,dhania powder.
  • Pressure cook for 6-7 whistles.
  • Once cooled down use a masher and mash the matar and also rough mash the potatoes into small bite sized pieces.

  • Add tomatoes and a little water if necessary and bring it a boil.
  • Now add salt as per taste and refined oil and mix well.
  • I prefer keeping my ragada simple and minimum with spices.
Assembling the dish:-

  • Crush 7-8 pani puris on a plate.
  • Pour the prepared Ragada.
  • Top with finely chopped onions.
  • Pour the whisked curd( add salt,chaat masala,cumin powder and whisk the curd)
  • Sprinkle the sev and add the chutney of your choice.
  • Sprinkle chaat masala and chilly powder(as per taste)
Serve Immediately.

Follow the same recipe and make Chaat using Samosa ,Aloo tikki instead of Pani puris.
