Pumpkin-Spinach Curry

Earlier i made a lovely curry using Pumpkin the recipe of which you will find here. Today i made it using Pumpkin in Spinach gravy.This easy to make curry is purely a  satvic ahaar without Onions and Garlic and served it with Luchi. 

Preparation time:- 10 mins
Cooking time:- 20-30 mins
Serves 4-5 ppl

Ingredients Required:-
  • 2 cups of Pumpkin peeled and diced into bite sized pieces
  • 1 cup of Potato peeled and diced
  • 1 cup of Spinach puree
  • 1 inch piece of ginger finely chopped
  • 2 tspn of oil
  • 1 tspn of Panch-Poran ( equal quantities of Cumin, Mustard,Fenugreek,Nigella and Fennel seeds)
  • 2 whole red chilly broken into two
  • 1/4 tspn of Asafoetida (hing)
  • 1 tspn of Turmeric powder
  • 1 tspn of Red chilly powder
  • 1 tspn of garam masala powder
  • Salt to taste
Procedure to make:-
  • In a saucepan heat some oil and once oil gets heated add the panch-poran and after it splutters add turmeric powder and hing.
  • Now add Whole Red chilly and ginger.
  • Add Pumpkins and Potatoes and cook it on a medium flame till its done.
  • Add Spinach puree and mix well.
  • Add red chilly and garam masala powder.
  • Finally add salt as per taste.
Serve hot with Luchis, Steamed Rice, Phulkas or Naans.
