Kaddu( Red Pumpkin) with meethi( fenugreek) is another unlikely combo,with kaddu being sweetish and meethi having a bitter taste. This curry made in a dry form with minimum spices and no onion no garlic makes a excellent curry to be eaten with Puris or Sattu ka paratha. 

Preparation time:- 20 mins
Cooking time:- 20 mins
Serves:- 3-4 people

Ingredients required:-

  • 500 grams of red pumpkin ( peeled and cubed)
  • 1 bunch of meethi leaves finely chopped
  • 2 tspn of thick tamarind pulp or amchoor powder
  • 1/4 cup of pistachios and cashews nuts
  • 2 inch piece of ginger grated
  • 1 whole red chilly broken into two
  • a generous pinch of hing
  • 1 tspn of Cumin seeds
  • 1 tspn of Mustard seeds
  • 1 tspn of Turmeric powder
  • 1 tspn of red chilly powder
  • 1 tspn of dhania powder
  • 2 tspn of refined oil or Hudson canola oil
  • Salt as per taste
Procedure to make:-
  • Heat oil in a saucepan and add 1 tspn of cumin and mustard seeds along with turmeric powder,hing and whole red chilly.
  • After the mustard crackles add grated ginger and pista and cashews and saute well.
  • Now add finely chopped meethi leaves and saute for 2-3 mins and then add tamarind pulp or amchoor powder to remove bitter of meethi leaves.
  • After 5 mins add the diced pumpkin and mix well.
  • Add a little water ( 1/4 cup) if necessary and also dhania powder and red chilly powder.
  • Add salt as per taste.
  • Cover and cook for 10 mins on a medium flame.
  • Serve hot with Phulkas or Puris.
